It’s no secret that sometimes when I’m caught off-guard, I have a tendency to say stupid things… in which case my sister likes to yell, “FAIL” in my general direction. She’s so nice.
BUT THE TABLES HAVE TURNED. I know I promised to share our semi-homemade red velvet cupcakes with cream cheese frosting recipe, but… we failed. SHE FAILED. FAIL FAIL FAIL. I think I’m done.
Since that won’t be happening, we decided to do something else instead. We decided to express our woes by lying in the grassy aquatic plants growing in our dried up pond. How much more depressing can we make that sound?
*EDIT* Okay, so we tested a recipe tonight and it actually worked well! This is a semi-healthy version to brownies:
In a saucepan on medium heat, mix these:
1/2 cup of plain sugar-free applesauce
3/4 cup white sugar (or split this/replace with splenda)
2 eggs (or more applesauce)
1 teaspoon vanilla extract
Remove from heat, and add this:
1/3 cup unsweetened cocoa powder
1/2 cup self-rising flour
Bake these at 350 degrees for 30-40 minutes!
If you’d like to make a frosting (kills the health value, but it’s oh so good!), turn that heat back on and mix these in a saucepan (hopefully you have more than one, but I know some folks that will not be named that don’t… so I won’t judge 😉 )
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners’ sugar
Pour this on top of the brownies and DEVOUR THEM.
